On a beautiful Spring day in April, 2011, we had the most gloriously-foodie-fun day at The Village at Lyons (“Lyons”) in Kildare. When I say “we”, I mean my former work Division Management group and I at our annual team-building “Away-Day”. Ten of us (5 lads and 5 lassies) went down to a team cookery course hosted by the celebrity chef, television presenter, and author, Clodagh McKenna. Back then she ran the course at Lyons (the latter property is now run as a hotel I understand). I’m well known amongst my friends and family for my culinary skills…particularly Haricots Cuits Sur Rōtie (baked beans on toast)😊 . At the time of writing, I am cocooned in Dublin due to Covid-19. I’m conscious that this is affecting people in very many ways; not least that Organ Donor Awareness Week 2020 (28th March – 4th April 2020) had to be postponed.
More than ever, this crisis gets me thinking of all those who struggle with their health all of the time....... particularly those waiting for an organ transplant. Organ donation is something that I strongly encourage. Now, I know that for many the idea of blood and body parts makes you squeamish. But try to get past that to think of the second chance of life you might be giving to another human being.
